Yam Puffs Recipe

Kids will really like this Yam Puffs recipe. The marshmallow in the center will be a surprise and treat for them. This is one of our favorite Thanksgiving side dish recipes, they are also great for Easter dinner with ham.

Ingredients:

  • 3 cups cooked sweet potatoes, mashed
  • 1 1/2 cups sugar
  • 1/2 stick butter
  • 1 tsp flavoring (lemon or vanilla)
  • 1/2 cup coconut
  • 1 dozen marshmallows (regular size)
  • 1 cup corn flakes, crushed
DIRECTIONS:

    Mix everything except marshmallows and corn flakes together and let set in the refrigerator until firm enough to shape into balls.

    Take about one tablespoon of mixture and shape into ball.

    Push marshmallow into center and cover all around with yam mixture.

    Roll ball in cornflakes.

    Place on greased cookie sheet and bake at 375 ° for 20 minutes.
