This Stuffed Celery Recipe is one of our favorites. It is good served as an appetizer or with turkey and dressing at Thanksgiving. This keeps for a week in the fridge so you can stuff the celery ahead of time and have it ready when needed.
Ingredients:
Several stalks celery.
1-8 ounce cream cheese, softened.
1-4 ounce jar pimentos, chopped finely.
2 Tbsp mayonnaise.
salt to taste.
DIRECTIONS:
Beat cream cheese until smooth.
Add the pimentos and mayonnaise and mix well.
Chill until ready to serve.
Cut celery stalks into serving size pieces about 4" long.
Place mixture on celery stalks and serve.
Chip Dip
This chip dip is a great dip served with potato chips or as a vegetable dip.
