Southern Corn Bread


Southern Corn Bread is an old recipe we have been using for years. It is a quick and easy recipe that can be used for any meal and will win applause for the cook. We have this rather that white bread with our vegetable dishes.

Ingredients:

  • 4 Tbsp butter
  • 2 cups self rising corn meal
  • 1 1/2 cups buttermilk
  • 1 large egg (optional)*
  • pinch kosher salt
  • *If egg is used the corn bread will rise more. We have it both ways.

DIRECTIONS:

  • Pre heat oven to 450°.
  • Combine corn meal, buttermilk and salt.
  • Put butter into a 8" or 9" cast iron skillet , place in oven until butter melts.
  • Remove skillet from oven and pour butter into corn meal mixture.
  • Mix well and pour back into hot skillet.
  • Bake at 450° for 25 minutes.
  • Turn onto plate slice and serve.
