Southern Corn Bread is an old recipe we have been using for years. It is a quick and easy recipe that can be used for any meal and will win applause for the cook. We have this rather that white bread with our vegetable dishes.
Ingredients:
4 Tbsp butter
2 cups self rising corn meal
1 1/2 cups buttermilk
1 large egg (optional)*
pinch kosher salt
*If egg is used the corn bread will rise more. We have it both ways.
DIRECTIONS:
Pre heat oven to 450°.
Combine corn meal, buttermilk and salt.
Put butter into a 8" or 9" cast iron skillet , place in oven until butter melts.
Remove skillet from oven and pour butter into corn meal mixture.
