Shrimp Cooking Tips

Fresh Shrimp: Fresh shrimp should be processed or used as soon as possible. They should be cooked or frozen, for use later, as quickly as possible.

Thawing: You can thaw shrimp in the refrigerator overnight for next day use. You can also thaw under cold running water until soft to the touch. Do not allow shrimp to reach room temperature. Cook while partially chilled. Never refreeze after thawing.

Shelling: Hold onto the tail while gently removing the shell around the body just above the tail. You can detach the tail completely, or leave it on for serving purposes.

Deveining: After removing the shell, with a sharp knife make a shallow cut along the outer curve of the shrimp's body. You'll see the dark vein running along the shrimp's back. Pick out the vein with a pointed utensil. Rinse the shrimp under cold running water.

Note: You can use a shrimp deveining tool to both devein and shell shrimp in one step. These shrimp cleaner tools are readily available at seafood markets and kitchen supply stores.

Butterflying: Peel shrimp using the shelling instructions above. Leaving the tail intact is makes serving easier. Using a sharp knife cut lengthwise along the outer curve of the shrimp with out cutting all the way through, leaving enough meat to keep the two sides connected. After cutting the two sides should lay flat.

Boiling: Bring water to a boil. Add one lemon-quartered, 1/4 onion sliced, salt to taste, Zatarain's Shrimp and Crab Boil, and Old Bay Seasoning. After adding shrimp begin timing for 4 minutes. Don't worry about returning water to a boil. At the end of two minutes turn off heat and add 1/4 stick butter to pot. Cover and let set for 5 minutes. Drain and eat, warm or cold. This should give you easy to peel boiled shrimp.

Deep frying: Dip shrimp into egg bath then into a mixture of one part flour, one part corn meal. Fry in peanut, canola or vegetable oil at 370°F until golden brown.
