This Baby Back Rib Barbecue Sauce is the result of many years of trying different recipe for sauce until we found the right one. We use this for all of our barbecuing.
This recipe is for the rib sauce but I will describe my method for cooking the ribs just in case you need help. Start you fire following the directions on the Pork Meals page and adjust air intake for slow cooking.
Prepare the ribs by peeling off tough layer of skin on back side. Use a table knife for this, not a sharp knife. Season to taste with salt and pepper.
Place ribs in the center of cooking grate above a drip pan. If you use a rib rack just place in the center of the piles of briquettes. If you do not have a rib rack, stack the ribs on top of each other in the center of the cooking surface. Shuffle the ribs in the stack by moving the bottom rib to the top of the stack every half hour. Cook for at least an hour and a half. The slower you cook the ribs without burning the better. Baste with sauce the last 30 minutes.
Sauce Ingredients:
6 Tbsp margarine
1/4 cup vinegar
1/2 cup ketchup
2/3 cup Texas Pete
1/4 cup molasses
1 Tbsp brown sugar
1tsp ground red pepper
dash black pepper
salt to taste
DIRECTIONS:
Mix all ingredients in sauce pan. Bring to a boil.Reduce heat to low and simmer 5 minutes.
