This Recipe for Broccoli Salad is a recipe that I came up with after eating it in a restaurant and fell in love with it. Great served with a grilled steak, pork chops or pork tenderloin.
Ingredients:
4 cups broccoli flowerets
1 red onion sliced thinly
1/4 cup green olives sliced
1/4 cup rice wine vinegar
1 tsp lemon juice
1/4 cup salad oil
1/8 tsp freshly ground black pepper
DIRECTIONS:
Rinse broccoli thoroughly. Break into bite size flowerets.
Combine the broccoli, onion and green olives in a bowl.
Combine the vinegar, lemon juice, oil and black pepper in a closed container and shake well. Pour over broccoli mixture
Refrigerate at least 3 hours or overnight.
This is a very pretty salad, so serve in a nice clear glass salad bowl.
