Raisin Bran Muffins




Rasin Bran Muffins These Raisin Bran Muffins are great for breakfast served with fresh made applesauce. Good to have some made up and stored in refrigerator when you have house guests. Just pop in the oven for a hot treat.

Ingredients:

  • 15 ounce Post Raisin Bran Cereal or 7 1/2 cups
  • 5 cups plain flour
  • 3 cups sugar
  • 5 tsp baking soda
  • 1 1/2 tsp salt
  • 1 quart buttermilk
  • 1 cup vegetable oil
  • 4 eggs beaten

DIRECTIONS:

    Mix the flour with sugar, baking soda and salt.

    Add this to the raisin bran in a large bowl.

    Add the buttermilk, oil and eggs to the dry ingredients.

    Mix until just moistened.

    This mix will keep in the refrigerator up to six weeks.

    Bake at 400° for 15-20 minutes.
