Almost everyone likes poultry. It is a great source for of high quality protein along with thiamine, riboflavin, niacin and calcium. In many kitchens, chicken used to be held in reserve for Sunday dinners. And turkey was a seasonal treat. Safety Tip: Cooked poultry should be cooled quickly, uncovered, and then covered or wrapped and stored promptly in the refrigerator. Do not allow poultry to stand at room temperature longer than two hours. Refrigerate meat and gravy in separate containers. Be sure to wash your hands thoroughly after handling poultry.
