These recipes are the result of years of experimentation. Hope you enjoy them.

Pork is very easy to work with. It is much leaner than it was years ago. Depending on the cut, it is great roasted, grilled, barbecued or sauteed. It can also be used in recipes requiring veal as a less expensive substitute. Some cuts can be made more flavorful by marinating or seasoning with a dry rub.

I must admit my favorite method of cooking this meat is on the grill. I must also confess my favorite grill is a Weber grill. I like to cook barbecue meat slow using the indirect method and the Weber makes this easy. I will describe the indirect method below.

Regardless of which cut or method you chose be sure to cook the meat thoroughly.

Indirect method of cooking

Place 25 charcoal briquettes on each side of the grill. Light the briquettes. After they have a light coating of ash (about 30 minutes). Place a drip pan between the charcoal piles, place the cooking grate on the grill and add the meat. Add briquettes and smoking chips every hour. Follow the recipe directions to complete meal.
