This Olive Pesto is very
good on bruschetta

olive pesto

This olive pesto is very good on bruschetta* or sliced french bread if you are in a hurry. It is really good if you love olives.

Ingredients :

  • 1 13 oz jar green salad olives
  • 2 large cloves of garlic
  • Few slices pickled jalapeno peppers
  • 1/4 cup cilantro
  • 2/3 cup olive oil

  • DIRECTIONS:

    Process all in food processor or blender except the oil.

    After all other ingredients are well blended, and with motor running, add olive oil in a slow, steady stream until all is incorporated.

    Serve with tortilla chips, or fresh, raw vegetables, or on bruschetta* (see note).

    *Note: bruschetta from Italian bruscare meaning "to roast over the coals" this traditional garlic bread is made by rubbing slices of toasted bread with garlic cloves, then drizzling the bread with extra-virgin olive oil. The bread is salted and peppered, then served while warm.
