Nana's Lentil Soup recipe



Nana's Lentil Soup Recipe is a perfect combination of ingredients that is sure to satisfy. Leave out the sausage and substitute the butter with olive oil and the chicken broth with vegetable broth for a good vegetarian soup.
Ingredients:

  • 1 cup lentils
  • 2 cloves garlic minced
  • 2 stalks celery diced
  • 1/2 cup chopped onion
  • 1 Tbsp butter
  • 1 Tbsp olive oil
  • 1 cup grated carrot
  • 1 can diced potatoes
  • 4 cup chicken broth
  • 2 cups water
  • 1 cup tomato sauce
  • 1 can Rotele tomatoes
  • 1 tsp salt
  • 1/3 cup cooked brown rice
  • 1/2 pound smoked sausage
DIRECTIONS:

    Soak lentils in water for a hour.

    Drain well then stir fry in a little olive oil.

    Season with salt, pepper and garlic powder to taste. Set aside

    In a large pot, sauté garlic, celery and onion in butter and
    olive oil until tender.

    Stir in carrots and potatoes.

    Add water, tomato sauce, Rotele, salt, brown rice and lentil mixture.

    Bring to a boil. Reduce heat, cover and simmer until lentils and
    potatoes are tender (about 30 minutes).

    Brown sliced smoked sausage in olive oil add this to other ingredients
    simmer for another 20 minutes.
