Kale Soup with Smoked Sausage

This Kale Soup with Smoked Sausage is one of our favorite kale recipes. If you have never tried kale before you should experiment with it. It is a treat with its rich, mild flavor.

Ingredients:

  • 2 tsp olive oil
  • 2 medium onions
  • 8 sups chicken broth
  • 2 1/2 pounds potatoes, cubed (I use Yukon Gold, because they hold their shape)
  • 4 garlic cloves, minced
  • 1 pound kale, trimmed, washed well and chopped
  • 8 ounces Kielbasa smoked sausage halved lengthwise and sliced
  • Seasonings-salt, pepper, garlic powder and ground red pepper
DIRECTIONS:

    In a large saucepan, heat oil.

    Add onions and cook over medium heat, stirring until golden brown.

    Add broth, potatoes, garlic, sausage and kale to onion mixture.

    Bring mixture to a boil. Reduce heat to low; simmer for 1 hour or until potatoes and kale are tender.

    Season with salt, pepper and garlic powder. Add ground red pepper for a little spice.

    Serves 8-1 cup servings.
