This Kale Soup with Smoked Sausage is one of our favorite kale recipes. If you have never tried kale before you should experiment with it. It is a treat with its rich, mild flavor.
Ingredients:
2 tsp olive oil
2 medium onions
8 sups chicken broth
2 1/2 pounds potatoes, cubed (I use Yukon Gold, because they hold their shape)
4 garlic cloves, minced
1 pound kale, trimmed, washed well and chopped
8 ounces Kielbasa smoked sausage halved lengthwise and sliced
Seasonings-salt, pepper, garlic powder and ground red pepper
DIRECTIONS:
In a large saucepan, heat oil.
Add onions and cook over medium heat, stirring until golden brown.
Add broth, potatoes, garlic, sausage and kale to onion mixture.
Bring mixture to a boil. Reduce heat to low; simmer for 1 hour or until potatoes and kale are tender.
Season with salt, pepper and garlic powder. Add ground red pepper for a little spice.
