This Italian Sausage Recipe is excellent for spaghetti sauce or on a pizza. If not using right away, freeze in zip lock bags.
Ingredients:
3 pounds pork
1 large clove of garlic, minced
1 tsp salt
1 Tbsp dried parsley flakes
1 Tbsp fennel seeds
1 tsp coarse ground black pepper
olive oil
DIRECTIONS:
Run pork through a meat grinder twice to get ground to the perfect texture for sausage.
Using a spice grinder, grind the fennel seeds to a fine texture.
Add the dried parsley flakes to the fennel along with the garlic, salt and pepper.
Add all the spices to the meat and mix well with hands.
Cover and refrigerate overnight to blend flavors.
Makes 3 pounds.
When ready to use, sauté in cast iron skillet over medium heat in a small amount of olive oil. Cook until all red color is gone. Drain oil before from using.
