Homemade Chicken Soup Recipe


Homemade Chicken Soup Recipe is a fast and easy chicken soup recipe. You will find it easy to prepare, cheap, nutritious and much better than canned chicken soup. Hope you enjoy our Family Recipe.

Ingredients:

  • 1 medium onion
  • 3 stalks celery, chopped
  • 1 cup carrots, sliced thin
  • 2 cups shredded cabbage
  • 2 cups frozen, cut green beans
  • 1 Tbsp butter
  • 1 Tbsp olive oil
  • 2 tsp thyme
  • 2 tsp Kosher salt
  • 2 cups water
  • 6 cups chicken broth
  • 1 whole rotisserie chicken, bought ready to eat in grocery store
  • 1 Tbsp fresh chopped parsley

DIRECTIONS:

  • Melt butter with olive oil in large kettle over medium heat.
  • Add onions, celery, carrots, and cabbage.
  • Saute until the onion becomes transparent.
  • Add green beans, chicken broth, salt and thyme.
  • Cover and cook until vegetables are tender.
  • Continue cooking for about 30 minutes.
  • Reduce heat to simmer while cutting up chicken into bite size pieces.
  • Add chicken to the broth and continue simmering until heated thoroughly.
  • Add chopped parsley and serve immediately.
