Ingredients:
1 medium onion
3 stalks celery, chopped
1 cup carrots, sliced thin
2 cups shredded cabbage
2 cups frozen, cut green beans
1 Tbsp butter
1 Tbsp olive oil
2 tsp thyme
2 tsp Kosher salt
2 cups water
6 cups chicken broth
1 whole rotisserie chicken, bought ready to eat in grocery store
1 Tbsp fresh chopped parsley
DIRECTIONS:
Melt butter with olive oil in large kettle over medium heat.
Add onions, celery, carrots, and cabbage.
Saute until the onion becomes transparent.
Add green beans, chicken broth, salt and thyme.
Cover and cook until vegetables are tender.
Continue cooking for about 30 minutes.
Reduce heat to simmer while cutting up chicken into bite size pieces.
Add chicken to the broth and continue simmering until heated thoroughly.
