Ground Beef Soup

We received this Ground Beef Soup Recipe from a friend while living in Minnesota. It was always good to have a pot of soup cooking during the winter months to eat after ice skating or just playing in the snow. It is an easy soup recipe that I think you will enjoy.

Ingredients:

  • 3 Tbsp butter
  • 1 medium onion
  • 1 1/2 pounds ground beef
  • 1 can tomatoes 28 ounces
  • 2 cans beef bouillon or consommé
  • 2 can water
  • 4 medium carrots (sliced)
  • 1 bay leaf
  • 6 sprigs parsley
  • 4 celery tops
  • 1/2 tsp thyme
  • 5 peppercorns coarsely ground
  • 1 Tbsp salt
  • 8 Tbsp barley
Directions:
    Melt butter in pot. Add chopped onion.

    Cook until limp (not brown).

    Add ground beef and brown lightly.

    Pour in tomatoes, consume, and water.

    Add other ingredients.

    Cover and cook over low heat 1 1/2 hours.

    Serves 6.
