Southern Fruit Cake

This delicious Fruit Cake Recipe is not what you receive as a Christmas gift and end up throwing away. Give it a try and I guarantee you will be hooked.

It is better to make them at least a month before you need them so they can be aged. We wrap them in cheese cloth and drizzle with Bourbon weekly under a covered cake dish. If you don't want to age them they can be served immediately.

Ingredients:

  • 1 pound chopped candied cherries
  • 1 pound chopped candied pineapple
  • 4 cups chopped pecans
  • 2 cups self rising flour
  • 2 sticks butter (room temperature)
  • 1 cup sugar
  • 4 eggs (room temperature)
  • 1 Tbsp vanilla flavoring
  • 1 Tbsp lemon flavoring
DIRECTIONS:

    Preheat oven 300°.

    In a large bowl, mix together cherries, pineapples and pecans.

    Sift flour over the above mixture and stir gently until well mixed.

    In a second bowl cream the butter and add sugar. Mix well.

    To second bowl add eggs and flavorings. Mix.

    Add second mixture to first mixture and mix well.

    Pack into a well greased and floured tube pan.

    bake for two hours at 300°.
