Bring water to 115°. Use Microwave for this and use instant read thermometer. This will take about 1 minute.Add yeast, salt and oil to warm water.
To this mixture slowly incorporate 2 cups of the flour. Mix 1 minute to form a sponge.
Cover and let mixture rise for 1 hour.
Using a standing electric mixer place sponge into bowl.
Add the salt and oil then slowly add the flour while using the dough hook to form a dough.
Remove dough from bowl and place on a floured surface.
Knead until smooth.
Place into an oiled container, cover and let rise for 2 1/2 hours.
Separate dough into 4 equal balls.
Prepare grill by lighting charcoal and spreading evenly.
Press out one dough ball using fingers.
Place on a pizza peel with a light coating of corn meal and place on grill.
Grill on this side until golden brown.
If you just want flat bread flip over and grill other side until browned.
If you want a Grilled Pizza, remove from grill when first side is browned. Turn over onto pizza peel and add your choice toppings to browned side and return to grill. Cover until cheese melts.
If you want a grilled dessert, after first side is browned remove from grill as for Pizza above and cover top of flat bread with Nutella (Hazelnut Spread) and top with Blueberries or sliced Strawberries. Sprinkle a little cinnamon sugar over top and return to grill. Cover and grill until bottom of crust is browned.
Prepare and grill one dough ball at a time. If you roll out dough to quick before placing on grill they have a tendency to stick.
