Fish and Corn Chowder





Fish and Corn Chowder is a creamy combination that will please your family and friends. Very good served with corn bread.

Ingredients:

  • 2 tsp olive oil
  • 1 cup chopped onion
  • 2/3 cup chopped sweet red pepper
  • 1 jalapeno pepper
  • 1/2 cup chopped celery
  • 2 cups corn (cut off the cob)
  • 1/2 tsp fresh thyme
  • 1/4 tsp black pepper
  • 2 cup chicken or fish stock
  • 8 ounces new potatoes, cubed
  • 12 ounces cod or flounder cut into 1" pieces
  • 1 1/4 cups evaporated milk
DIRECTIONS:

    Cook onion in oil for about 5 minutes until soft.

    Add pepper, celery and jalapeno. Cook about 5 minutes.

    Add corn, thyme and black pepper.

    Cook 10 minutes stirring often to prevent sticking.

    Add stock and potatoes. Bring to a boil.

    Reduce heat. Simmer 15-20 minutes until potatoes are tender.

    Over low heat stir in fish and milk simmer about 10 minutes until fish are done.

    Serves 6.
