Energy Bars



Energy Bars These energy bars are dessert like but they are not desserts. They can be taken to work for a mid morning snack or have before going to the gym for a workout. Careful!!! they can be habit forming.

Ingredients:

  • 1 cup rolled oats
  • 1 cup crunchy cereal
  • 1/4 cup sunflower seeds
  • 1 1/2 cup dried apricots, diced
  • 1 cup raisins
  • 1/4 cup chopped almonds
  • 1/4 cup wheat germ
  • 1/2 cup protein powder
  • 1/2 cup honey
  • 1/4 cup pure maple syrup, not pancake syrup
  • 1 Tbsp butter or oil
  • 1/2 cup peanut butter
  • 1 tsp cinnamon

DIRECTIONS:

    Toast oats, cereal and sunflower seeds at 350° for 10 minutes.

    Add next four ingredients. Mix completely.

    In a saucepan over medium heat melt butter or heat oil.

    Add syrup and honey stirring until bubbly.

    Stir in peanut butter and cinnamon. Pour over dry ingredients.

    Mix and press into a 9"X13" pan.

    Helpful hint: Wet your hands to press it into pan.

    Refrigerate 4 hours. Cut into bars. Wrap separately in wax paper and store in refrigerator.
