Sharon's Easy Gingerbread
with Lemon Raisin Sauce



Sharon's Easy Gingerbread with Lemon Raisin Sauce recipe was given to me by my sister. It is a very good tangy treat that I hope you will enjoy.

Bread Ingredients:

  • 2 1/2 cups flour

  • 2 tsp. baking powder

  • 1/2 tsp. soda

  • 1/2 tsp. salt

  • 2 tsp. ginger

  • 1 1/2 tsp. cinnamon

  • 1/2 tsp. nutmeg

  • 1/4 tsp. cloves

  • 3/4 cup canola oil

  • 3/4 cup brown sugar

  • 2 eggs beaten

  • 3/4 cup molasses

  • 1 cup boiling water

Bread Directions:

    Sift dry ingredients in separate bowl.

    In mixing bowl beat eggs and brown sugar until blended.

    Add oil and molasses mix well.

    Add small amounts of flour and then small amounts of boiling water until all is combined.

    Pour into oiled 13"x9" pan.

    Bake in preheated oven at 350° for 45 minutes.

Lemon Raisin Sauce Ingredients:

  • 3/4 cup sugar

  • 2 Tbsp corn starch

  • 2 cup water

  • 1/4 cup butter

  • 1/4 cup fresh lemon juice

  • Dash of salt

  • Raisins, (optional)

Bread Directions:

    Mix sugar and corn starch together in sauce pan.

    Add water small amount at a time mixing.

    Cook until mixture thickens and clears.

    Add lemon juice and raisins if desired.

    Spoon warm lemon sauce over warm cake.
