This is my version of a Easy Fruit Salad Recipe that I had at a staff meeting held at a Country Club many years ago. Good to serve with chipped beef on toast or creamed chicken over rice.
Ingredients:
1 can fruit cocktail drained.
1 can mandarin oranges drained.
1 red apple diced into bite size pieces leaving peel on.
1 stalk of celery sliced thinly
1 cup walnuts chopped
1 cup flaked coconut
8 ounces cottage cheese
1/4 cup mayonnaise or just enough to moisten
DIRECTIONS:
Gently toss first five ingredients together.
Add the remaining ingredients and toss gently until well mixed.
