Easy Carrot Cake




This Easy Carrot Cake Recipe is a delicious cake that can be served for all occasions. It is great with a cold glass of milk or a cup of fresh brewed coffee.

Cake Ingredients:

  • 3 cups grated carrots
  • 2 cups sugar
  • 1/4 cup oil
  • 4 eggs
  • 2 cups flour
  • 1 tsp salt
  • 2 tsp soda
  • 2 tsp cinnamon
Icing Ingredients:

  • 1 stick butter, softened
  • 1 package (8 oz) cream cheese, softened
  • 1 tsp vanilla
  • 1 box powdered sugar, sifted
DIRECTIONS:

    Mix all cake ingredients together to make a batter.

    Place batter in a 13"X9" glass baking pan.

    Bake at 350°F for 40 minutes or until done when tested with a tooth pick or cake tester.

    Cream together the softened butter and cream cheese until light and fluffy.

    Sift the powdered sugar and add gradually to the butter and cheese.

    Add vanilla and top cake when cool.
