Easy Apple Cake

I like to make this Easy Apple Cake in the fall when the new crop of apples becomes available. It is definitely a comfort dessert, especially good with a cup of coffee on a cool fall day. It also makes the kitchen smell wonderful while baking.

Ingredients:

  • 3 cups diced apples, a cooking apple like Granny Smith.
  • 1 cup canola oil.
  • 2 cups sugar.
  • 2 1/2 cups plain flour.
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp salt
  • 1 1/2 tsp soda
  • 1/2 tsp cinnamon
  • 1/2 tsp cloves
  • 1/2 tsp nutmeg
  • 1 cup chopped nuts
  • 1/2 cup raisins (optional)
DIRECTIONS:

    Put diced apples in bowl and add oil and sugar over apples.

    Add eggs and vanilla.

    Sift all dry ingredients together and stir into apple mixture.

    Pour in a well greased and floured tube pan.

    Bake for 1 hour.
