Amy's Corn Casserole
Amy's Corn Casserole is very good with our Steak Biscuits and is also good with the Thanksgiving Turkey.Ingredients: - 8 ears fresh corn
- 2 eggs
- 1 box corn muffin mix
- 1/2 cup whipping cream
- 1 onion, minced
- 1 clove garlic, minced
- 1 stick of butter
- water (about 1 cup)
- salt and pepper to taste
DIRECTIONS:Cut corn from cob making sure you scrape the cob.Over medium heat melt butter and saute onion until translucent. Add corn and garlic, cook a few minutes before adding water. Cook down until thick. In a casserole dish add corn and remaining ingredients. Bake at 350° until brown.
