Amy's Corn Casserole


Amy's Corn Casserole is very good with our Steak Biscuits and is also good with the Thanksgiving Turkey.

Ingredients:

  • 8 ears fresh corn
  • 2 eggs
  • 1 box corn muffin mix
  • 1/2 cup whipping cream
  • 1 onion, minced
  • 1 clove garlic, minced
  • 1 stick of butter
  • water (about 1 cup)
  • salt and pepper to taste
DIRECTIONS:

    Cut corn from cob making sure you scrape the cob.

    Over medium heat melt butter and saute onion until translucent.

    Add corn and garlic, cook a few minutes before adding water.

    Cook down until thick.

    In a casserole dish add corn and remaining ingredients.

    Bake at 350° until brown.
