Chocolate Pie Recipe


Chocolate Pie Ingredients:

  • 1 single pie crust prebaked
  • 1 1/2 cups sugar
  • 1/3 cup all-purpose flour
  • 2 Tbsp cornstarch
  • 1/4 cup cocoa
  • 1/8 tsp salt
  • 1 cup evaporated milk plus 1 cup water to make 2 cups milk
  • 3 egg yolks, lightly beaten
  • 1 Tbsp butter
  • 1 tsp vanilla
Directions:

    Combine sugar, flour, cornstarch, cocoa and salt.

    Stir in milk, mixing until smooth.

    Cook over low heat, stirring constantly until smooth and thickened (about 10 minutes).

    Add small amount of hot mixture to egg yolks, mix well.

    Add yolk mixture to hot mixture cook 2 minutes longer.

    Remove from heat, stir in butter and vanilla.

    Cool completely, pour into Pie Crust.

    Top with meringue.

Meringue Ingredients:

  • 3 egg whites (room temperature)
  • 1/2 tsp vanilla
  • 1/4 tsp cream of tartar
  • 6 Tbsp sugar
Meringue Directions:

    Beat egg whites with vanilla and cream of tartar until soft peaks form.

    Sprinkle all the sugar over egg whites and let set until the sugar dissolves.

    Then beat until it is stiff and glossy.

    Spread meringue over filling sealing to edges of pastry.

    Bake at 350° 12-15 minutes until peaks are golden brown.
