Amy's Brown Rice Salad

Amy's Brown Rice Salad is an easy to make light salad that has plenty of
taste. Good to serve for lunch or as a side dish for dinner with
baked or broiled chicken. Add some roasted asparagus or steamed
broccoli for a delicious, healthy meal. It is especially good using
homemade chicken broth.



Ingredients:

  • 1 cup brown rice (uncooked)
  • 2 1/2 cups chicken broth
  • 1 tomato, diced
  • 1/2 onion, chopped
  • 1/2 green bell pepper, chopped
  • 1/2 stalk celery, minced
  • 2 Tbsp mayonnaise
  • 6 Tbsp Italian Dressing

DIRECTIONS:

    Cook rice in broth until done (45 minutes)

    Mix with remaining ingredients.

    Add salt and pepper to taste.

    Chill before serving.
