Baked Parmesan Chicken Recipe

"These recipes are better than I imagined!"

Baked Parmesan Chicken Recipe is good served with creamed corn and fresh green beans. Sometimes I serve it with just a Ceasar salad for a light lunch or dinner.

Ingredients:

  • 6 boneless, skinless chicken breasts.
  • 1 cup whole wheat bread crumbs.
  • 1/3 cup freshly grated parmesan cheese.
  • 1/2 stick butter.
  • 1 clove garlic, crushed.
  • 1/4 cup dried parsley flakes
  • salt to taste
DIRECTIONS:

    Cut breasts in half.

    Place in ziplock bag, a few at a time.

    Pound with the smooth surface of a meat mallet until flattened and thin.

    Salt each piece of chicken.

    Melt butter in sauce pan with garlic. Let cool.

    Combine breadcrumbs, parmesan cheese and parsley flakes.

    Dip chicken into butter mixture then into breadcrumbs.

    Place on lightly greased baking sheet.

    Bake at 325° for 1 hour.
