Baked Mashed Potatoes

This Baked Mashed Potatoes is a casserole that is so convenient to make for the holidays or any time you have a lot of company. It can be made ahead and baked right before serving. It also freezes well.

Ingredients:

  • 5 pounds potatoes
  • 8 ounces cream cheese
  • 1 pint sour cream
  • 1 stick butter
  • salt to taste
DIRECTIONS:

    Wash and peel potatoes. Cut into wedges.

    Cover with water in a large pot. Bring to a boil.

    Cook until tender.

    Drain water from potatoes and mash thoroughly.

    Cut butter and cream cheese into mashed potatoes.

    Stir in sour cream and salt.

    If mix seems too thick add milk to obtain proper consistency.

    Pour into a 9"X13" casserole that has been sprayed with Pam.

    Bake at 350° for 30 minutes.

    Serves 12.
