Baked chicken nuggets are great for entertaining at home or pack them for a trip. Kids love these as much as adults do. Bake them in an oven for a healthier alternative to the common deep-fried nugget.
Ingredients:
8 whole chicken breasts, skinned and boned
2 cups fine, dry breadcrumbs
1 cup grated Parmesan cheese (Better to use fresh grated)
1-1/2 tsp. salt
1 Tbsp. dried oregano
1 Tbsp. dried basil
1 cup butter, melted
DIRECTIONS:
Cut chicken into 1" pieces.
Combine breadcrumbs, cheese, salt and herbs; mix well.
Dip chicken pieces in butter and coat with breadcrumb mixture.
Place on baking sheet. Bake at 400 degrees for 20 minutes or until done.
