Apricot Nectar Cake


This Apricot Nectar Cake is a quick and easy dessert recipe that always draws raves from those who eat it. When we attend a pot luck dinner we usually take this as a dessert dish.

Cake Ingredients :

  • 1 box lemon cake mix
  • 1 cup oil
  • 3/4 cup apricot nectar
  • 4 eggs
Glaze Ingredients:

  • 1/2 box powdered sugar, sifted.
  • juice of 1 lemon (3 to 4 tbsp).

Cake Directions:

    Mix cake mix, oil, nectar, and eggs.

    Beat until well blended.

    Pour into oiled 13x9x2 inch baking dish.

    Bake at 300° for 45 minutes to 1 hour until done.

    Remove from oven and place on cooling rack.

Glaze Directions:

    Mix all ingredients for glaze until sugar dissolves and pour over warm cake.

    Let glaze soak into cake while cooling.

    Cut into squares for serving.
